A moist, vibrant Easter Poke Cake featuring sweet condensed milk, pastel pudding stripes, and a cloud of whipped topping. The perfect easy spring dessert!

Easter Poke Cake
Why This Recipe Works:
  • Doctoring the boxed cake mix with sour cream adds fat and acidity, creating a sturdy yet tender crumb that won't dissolve into mush.
  • Waiting exactly 15 minutes before poking ensures the cake's protein matrix is set, allowing for clean, distinct pudding-filled channels.
  • Using cold milk to whisk the instant pudding keeps it fluid enough to pour easily into the holes before it sets completely.

I still remember the Easter of 2018 when I tried to make a multi-tiered pastel crepe cake, only to watch it slide into a sad, rubbery heap on my kitchen counter while my family politely pretended not to notice.

I learned my lesson the hard way.

Generic store-brand cake mixes failed my tests because their low protein content makes the cake disintegrate.

Think about this in terms of physics: if you press the wooden handle down until your wrist meets the cake's surface while it is piping hot, the fragile starch gelatinization hasn't set yet, and you will crush the delicate air pockets instead of creating clean channels.

Bear with me here, because the fix is incredibly simple.

We are doctoring a standard Betty Crocker white cake mix with full-fat sour cream to build a sturdy, velvety crumb that stands up to the liquid onslaught.

It is absolutely perfect.

Ingredients

  • 1 box (15.25 oz) white cake mix
  • 1 cup water
  • 3 large egg whites
  • 1/2 cup full-fat sour cream
  • 1/3 cup vegetable oil
  • 2 packages (3.4 oz each) instant white chocolate pudding mix
  • 4 cups cold whole milk
  • Pastel food coloring (pink, blue, yellow, green)
  • 1 tub (8 oz) whipped topping, thawed
  • 1/2 cup Easter sprinkles or crushed chocolate eggs

Directions

  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan.
  2. In a large bowl, whisk together the cake mix, water, egg whites, sour cream, and vegetable oil until smooth.
  3. Pour the batter into the prepared pan and bake for 28 to 30 minutes, or until a toothpick inserted in the center comes out clean.
  4. Remove the cake from the oven and let it cool on a wire rack for exactly 15 minutes.
  5. Using the handle of a wooden spoon, poke holes across the entire cake, spaced about 1 inch apart, pressing down about three-quarters of the way into the cake.
  6. In a large bowl, whisk the instant pudding mixes with the cold whole milk for 2 minutes until smooth but still pourable.
  7. Divide the pudding into three bowls and tint them with pastel food coloring, then pour the colorful puddings over the cake, using a spatula to push it into the holes.
  8. Refrigerate the cake for at least 4 hours to let the pudding set.
  9. Spread the thawed whipped topping evenly over the cake, decorate with Easter sprinkles, slice, and serve.

Notes

  • I highly recommend using Diamond Crystal kosher salt (add 1/4 teaspoon to the cake batter if you want to balance the sweetness of the cake mix).
  • Full-fat sour cream is essential here because its lactic acid weakens gluten bonds, ensuring a tender crumb that absorbs liquid without becoming rubbery.
  • Whisk the pudding and pour it immediately; if you let it sit in the bowl for even three minutes, it will set too much and refuse to flow into the poked channels.
  • After 24 hours in the fridge, the flavors actually meld beautifully, but the whipped topping will start to weep slightly by day three, so serve it within 48 hours for peak texture.

Storage and Reheating

Keep it cold.

Because of the dairy in the pudding and the whipped topping, this cake must live in the refrigerator, tightly wrapped in plastic wrap or covered with a fitted lid.

Do not freeze this cake.

Freezing completely ruins the delicate emulsion of the instant pudding, leaving you with a watery, separated mess once it thaws.

Simply slice it straight from the fridge and serve it chilled; there is absolutely no need to let it warm up to room temperature.

Ingredient Substitutes

If you need to make some adjustments based on what is in your pantry, here are the easiest swaps:

  1. Sour Cream: You can swap the sour cream for an equal amount of full-fat Greek yogurt if you want a slightly tangier bite.
  2. White Chocolate Pudding: Vanilla or cheesecake instant pudding mixes work beautifully if you cannot find white chocolate.
  3. Whipped Topping: If you despise store-bought whipped topping, you can whip 1.5 cups of heavy cream with 1/4 cup of powdered sugar until stiff peaks form, though it won't hold up quite as long in the fridge.
  4. White Cake Mix: A yellow cake mix or even a gluten-free cake mix can be used as the base without altering the baking time significantly.

This cake is proof that holiday baking does not have to be stressful to be absolutely memorable. Bring this to your next spring gathering, watch the pastel stripes surprise everyone when you cut the first slice, and enjoy the easiest dessert victory of the year.
