Directions

  3. Dredge each chicken cutlet in flour, shaking off the excess, then dip into the egg wash, and finally press firmly into the panko-parmesan mixture until fully coated.
  4. Heat vegetable oil in a large skillet over medium-high heat until it shimmers, then fry the chicken cutlets for 4 to 5 minutes per side until golden brown and the internal temperature reaches 165°F (74°C).
  5. Transfer the cooked chicken to a wire rack to drain; do not place them on paper towels, as trapped steam will make the bottom crust soggy.
  6. Spread softened butter on the cut sides of the brioche buns and toast them in a dry skillet over medium heat until deeply golden brown.
  7. Toss the shredded romaine lettuce with the Caesar dressing in a medium bowl until evenly coated.
