  • 1 tbsp Diamond Crystal kosher salt (or 1.5 tsp fine sea salt)
  • 1/4 cup fresh flat-leaf parsley, finely chopped

Directions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
  2. In a large skillet over medium-high heat, melt 2 tablespoons of butter. Add the chopped shrimp, half of the minced garlic, and red pepper flakes. Sear for 1 to 2 minutes just until the shrimp turn pink, then immediately fish them out with a slotted spoon and set aside in a bowl.
  3. Pour the white wine into the hot skillet to deglaze, scraping up any browned bits. Let it reduce by half, about 2 minutes.
  4. Reduce heat to medium. Add the remaining 2 tablespoons of butter and the rest of the garlic. Once melted, whisk in the flour and cook for 1 minute to remove the raw flour taste.
  5. Slowly whisk in the whole milk and heavy cream. Bring to a gentle simmer, whisking constantly, until the sauce thickens and clings to the back of a spoon. Stir in the Parmesan cheese and Diamond Crystal kosher salt until melted, then remove from heat.
  6. In a medium bowl, mix the ricotta cheese, egg, half of the parsley, and a pinch of salt until smooth.

  8. Repeat the layers: noodles, remaining ricotta, remaining shrimp, 1 cup of mozzarella, and white sauce. Top with the final layer of noodles, the remaining white sauce, and the rest of the mozzarella.
  9. Cover loosely with foil (ensuring it doesn't touch the cheese) and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbling and golden brown. Let it rest for 15 minutes before slicing so the layers set. Garnish with the remaining parsley.
