  • 1/2 cup cotija cheese or feta, crumbled (optional)

Directions

  1. Bring a large pot of salted water to a rolling boil. Cook the pasta according to package instructions until just al dente.
  2. Drain the pasta immediately and rinse thoroughly under cold running water until the noodles are completely cool to the touch. Set aside to drain fully.
  3. In a high-speed blender or food processor, combine the spinach, basil, parsley, avocado, Greek yogurt, garlic, lemon juice, olive oil, kosher salt, and black pepper. Blend on high until completely smooth and creamy.
  4. In a large mixing bowl, combine the cooled pasta, diced cucumber, thawed peas, and the blended green goddess dressing.
