These hot Italian sub sliders pack layers of cured meats, melted provolone, and a zesty garlic-herb butter glaze onto sweet Hawaiian rolls.

Hot Italian Sub Sliders
Why This Recipe Works:
  • The double-cheese barrier prevents moisture from soaking into the buns.
  • A savory garlic-herb butter glaze browns the tops beautifully via the Maillard reaction.
  • Baking covered first melts the cheese fully before crisping the buns uncovered.

I still remember the afternoon I ruined my brother's tailgate with soggy sandwiches.

I had assembled them hours in advance, but by kickoff, the bottom buns had dissolved into a sad, mushy paste that clung to the aluminum foil like wet cardboard.

The culprit here is simple water migration, where wet ingredients like banana peppers release moisture that easily bypasses the delicate protein matrix of standard bread. Think about this in terms of physics: without a hydrophobic barrier, the soft crumb of the roll acts like a thirsty sponge.

Enter cheese.

To fix this, we build a structural shield using sliced provolone on both the top and bottom buns to block the wet fillings. This keeps the rolls crispy while creating a beautiful, gooey pull.

Trust me, this simple layering trick completely saves the dish.

Ingredients

  • 1 package (12 count) sweet Hawaiian rolls (similar to the ones we use for our Mini Grilled Cheese Hawaiian Rolls)
  • 6 slices provolone cheese
  • 1/4 pound deli ham, thinly sliced
  • 1/4 pound Genoa salami, thinly sliced
  • 1/4 pound pepperoni, thinly sliced
  • 1/2 cup banana peppers, drained and patted dry
  • 4 tablespoons unsalted butter, melted
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon Diamond Crystal kosher salt
  • 1 tablespoon grated Parmesan cheese

Directions

  1. Preheat oven to 350°F (175°C). Line a 9x13-inch baking dish with parchment paper.
  2. Slice the entire block of rolls in half horizontally to create one giant top bun and one giant bottom bun. Place the bottom half in the prepared baking dish.
  3. Lay 3 slices of provolone cheese across the bottom buns, overlapping slightly to cover the bread completely.
  4. Layer the ham, salami, and pepperoni evenly over the cheese. Top with the drained banana peppers.
  5. Place the remaining 3 slices of provolone cheese over the meats, then cover with the top buns.
  6. In a small bowl, whisk together the melted butter, garlic powder, dried oregano, and Diamond Crystal kosher salt. Brush this mixture generously over the tops of the rolls, letting it drip down the sides.
  7. Cover the baking dish tightly with aluminum foil. Bake for 10 minutes, then remove the foil and bake for an additional 10 minutes until the cheese is melted and the tops are golden brown. Slice and serve warm.

Notes

  • Salt Conversion: We highly recommend Diamond Crystal kosher salt for this recipe. If you only have standard table salt, cut the measurement in half (use 1/8 teaspoon) to avoid an overly salty glaze.
  • The Science of Soggy Buns: Salami and pepperoni contain oil-soluble flavor compounds that bloom beautifully when heated. However, they also release grease, which is why the provolone barrier is essential to protect the crumb matrix of the bread.
  • Preemptive Workflow Warning: Do not skip patting the banana peppers dry with a paper towel. If you skip this step, the excess vinegar brine will steam inside the foil and ruin the crispness of your rolls.
  • Storage Behavior: Once baked, these sliders do not store well in the fridge as the peppers will eventually soften the bread. If you must make them ahead, assemble the meats and cheeses, but do not apply the butter glaze or bake until right before serving.

Serving Suggestions

These sliders are a crowd-pleasing powerhouse on their own, but pairing them with the right sides turns them into a complete, memorable feast.

  • Serve alongside our Italian Sandwich Roll-Ups for an epic party platter.
  • Pair with a crisp green salad tossed in a light vinaigrette to cut through the rich meats, or make a quick salad dressing like the one in our TikTok Chopped Italian Grinder Sandwich.
  • Offer a bowl of warm marinara sauce on the side for dipping.
  • Serve with crunchy potato chips or Italian-seasoned waffle fries.

Storage and Reheating

Leftovers are inevitable but manageable.

Store any leftover sliders in an airtight container in the refrigerator for up to two days. Keep in mind that the texture will change slightly as the bread absorbs the oils from the cured meats over time.

To reheat, avoid the microwave at all costs. Wrap the sliders in foil and bake at 325°F for ten minutes to restore the crisp top.

It works like a charm.

Ingredient Substitutes

If you don't have everything on hand, don't panic—these sliders are incredibly forgiving.

  1. Hawaiian Rolls: Use slider buns or dinner rolls if you prefer a less sweet base.
  2. Provolone: Mozzarella or Swiss cheese make excellent melty alternatives.
  3. Cured Meats: Turkey pepperoni or roast beef can easily replace the traditional pork cold cuts.
  4. Banana Peppers: Mild pepperoncini or even dill pickle slices work beautifully for that essential tangy crunch.
  5. Glaze: The garlic-herb butter glaze is also fantastic brushed over Homemade Pizza Dough if you have leftover butter mixture.

Next time you have friends over, skip the cold sandwich platter and slide these into the oven instead. Your kitchen will smell like a classic East Coast deli, and your friends will thank you for not serving them soggy bread.
