A rich, creamy, sun-dried tomato and garlic chicken skillet that comes together in just 30 minutes. Perfect for busy weeknights or special date nights.

Easy Marry Me Chicken
Why This Recipe Works:
  • Searing bone-dry chicken breasts locks in juices and creates a deeply caramelized fond at the bottom of the pan.
  • Blooming the garlic, oregano, and red pepper flakes in the sun-dried tomato oil extracts fat-soluble flavor compounds.
  • Heavy cream and freshly grated Parmesan emulsify with chicken broth to create a velvety sauce that never splits.

I still remember the exact Tuesday night my old stainless steel skillet warped on the burner because I cranked the heat too high, desperate to get a decent sear on a pair of wet chicken breasts.

It was a smoky, rubbery disaster.

My partner politely chewed through what tasted like shoe leather, whispering that the cream sauce was at least decent.

The problem wasn't my ambition; it was the physics of moisture. When you throw cold, damp chicken into a lukewarm pan, the water evaporates and steams the meat instead of browning it. This completely blocks the Maillard reaction, leaving you with gray chicken and a broken, greasy sauce that refuses to cling to your noodles.

To fix this, we need to dry the meat aggressively and bloom our spices in hot oil first.

Bear with me here, it works.

If you love these rich, sun-dried tomato flavors but want a different format, you can easily turn this into a Marry Me Chicken Pasta or even a lighter Marry Me Chicken Salad.

Ingredients

  • 1.5 lbs chicken breasts, cut into thin cutlets
  • 1.5 tsp Diamond Crystal kosher salt (or 3/4 tsp fine table salt)
  • 1/2 tsp freshly cracked black pepper
  • 2 tbsp oil from the sun-dried tomato jar
  • 3 cloves garlic, minced
  • 1 tbsp tomato paste
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • 1/2 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • Fresh basil leaves, for garnish

Directions

  1. Pat the chicken breasts completely dry with paper towels. Season both sides evenly with Diamond Crystal kosher salt and black pepper.
  2. Heat the sun-dried tomato oil in a large skillet over medium-high heat. Sear the chicken for 4-5 minutes per side until golden brown, then transfer to a plate.
  3. Reduce heat to medium. Add minced garlic, tomato paste, oregano, and red pepper flakes to the pan, stirring constantly for 1 minute to bloom the spices.
  4. Pour in the chicken broth and scrape up the browned bits from the bottom of the pan with a wooden spoon.
  5. Stir in the heavy cream and chopped sun-dried tomatoes. Bring to a simmer, then stir in the grated Parmesan cheese until melted and smooth.
  6. Return the chicken and its juices to the skillet. Simmer for 5 minutes until the sauce thickens and the chicken reaches an internal temperature of 165°F. Garnish with fresh basil.

Notes

  • Salt Conversion: We use Diamond Crystal kosher salt. If you are using fine table salt, cut the measurement in half (use 3/4 tsp) to avoid over-salting.
  • The Oil Secret: Searing the chicken in the oil from the sun-dried tomato jar instead of plain olive oil infuses the meat with concentrated, oil-soluble flavor compounds right from the start.
  • Workflow Warning: Turn down the heat before adding the garlic and tomato paste. Burning the garlic will ruin the cream base, turning it bitter and unpalatable.
  • Storage Behavior: The cream sauce will thicken significantly in the fridge as the dairy fats solidify. Simply splash in a little chicken broth when reheating to restore its velvety texture.
  • Slow Cooker Option: If you prefer a hands-off approach, try our Crockpot Marry Me Chicken for an ultra-tender variation.
  • Vegetarian Swap: For a meatless option, check out our Marry Me Chickpeas which uses the exact same luscious sauce.

Serving Suggestions

This dish begs for something to soak up that glorious, velvety cream sauce. Here are our favorite ways to plate it and complete the meal.

  • Serve over a bed of al dente fettuccine or penne pasta.
  • Pair it with a comforting bowl of Creamy chicken pasta for a double-dose of garlic bliss.
  • Provide plenty of warm, crusty sourdough bread to swipe up every last drop of sauce.
  • Spoon over fluffy garlic mashed potatoes or riced cauliflower for a low-carb twist.
  • Serve alongside simple Balsamic grilled vegetables with a touch of garlic flavor to cut through the richness of the cream.

Storage and Reheating

Store any leftover chicken in an airtight glass container in the refrigerator for up to three days. Avoid plastic containers, as the tomato-infused oil will permanently stain them bright orange.

Do not freeze this dish.

The dairy matrix in the heavy cream will break upon thawing, leaving you with a grainy, separated mess when you reheat.

To reheat, place the chicken and sauce in a skillet over low heat. Splash in two tablespoons of chicken broth or water, then whisk gently as it warms to bring the emulsion back together.

Ingredient Substitutes

Need to swap something out? Here are the best tested alternatives that won't ruin the dish.

  1. Heavy Cream: You can use full-fat canned coconut milk, though it will add a subtle tropical undertone. Avoid half-and-half as it is highly prone to curdling.
  2. Chicken Breasts: Chicken thighs work beautifully here and are much more forgiving if overcooked. Increase the simmer time by 3-4 minutes.
  3. Parmesan Cheese: Pecorino Romano offers a sharper, saltier kick, while Asiago melts into a beautifully mild, creamy alternative.
  4. Sun-Dried Tomatoes: If you are completely out, roasted red peppers can work in a pinch, though you will lose that signature tart chew.

This is hands down one of those magical recipes that makes you look like a seasoned pro with minimal effort. Grab your favorite skillet, dry that chicken, and watch the magic happen.
