Bear with me here, because we need to talk about starch. The issue lies in the starch gelatinization—or lack thereof—when you simply whisk cold milk into instant pudding mix. Without a proper fat-to-liquid ratio, the graham crackers absorb too much moisture too quickly, collapsing the structural integrity of the entire cake into mush.

Then I tried folding in whipped topping.

By folding stabilized whipped cream or a high-quality cool whip into the lemon curd and pudding mixture, you create a suspended emulsion. This thick, velvety barrier softens the graham crackers to a perfect, cake-like texture without letting them dissolve into slime.

Trust me on this one, it is hands down the easiest dessert you will make this summer. You do not need any fancy equipment, just a spatula and a little patience while it sets in the fridge.

  • 3 cups cold whole milk

  • 1 can (16 oz) ready-to-spread lemon frosting
  • 1/4 teaspoon Diamond Crystal kosher salt

Directions

  1. In a large mixing bowl, combine the instant lemon pudding mix, cold whole milk, and Diamond Crystal kosher salt. Whisk vigorously for two minutes until your forearms ache and the mixture begins to thicken.
  2. Gently fold in the thawed whipped topping and fresh lemon zest using a rubber spatula until no white streaks remain.
  3. Line the bottom of a 9x13-inch baking dish with a single layer of graham crackers, breaking them to fit the edges if necessary.
  4. Spread half of the lemon pudding mixture evenly over the graham cracker layer.
  5. Place a second layer of graham crackers on top of the pudding, followed by the remaining pudding mixture.
  6. Top with a final layer of graham crackers.
  7. Warm the lemon frosting in the microwave for 15 to 20 seconds until it reaches a pourable consistency, then pour it evenly over the top layer of graham crackers.
  8. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the crackers to soften into a cake-like texture.

Notes

  • I highly recommend using Diamond Crystal kosher salt (use 1/4 teaspoon, or substitute with 1/8 teaspoon of standard table salt) to balance the sweetness of the instant pudding.
  • Whole milk is crucial here because its fat content helps stabilize the starch network in the instant pudding; using skim milk failed every single test because it lacks the fat globules needed to trap the starch network.
  • Do not overheat the frosting in the microwave, or it will separate into an oily mess; warm it in short 10-second bursts and stir with a spoon.
  • After a day in the fridge, the graham crackers will fully hydrate and take on a texture identical to traditional eclair pastry, but by day four, they will begin to lose their structure.

Serving Suggestions

This chilled dessert is best served straight from the refrigerator to keep the layers clean and defined when slicing.

  • Garnish with fresh raspberries or blueberries for a beautiful color contrast.

I do not recommend freezing this cake. The emulsion of the whipped topping and pudding will break upon thawing, leaving you with a watery mess.
