Ingredients

  • 12 lasagna noodles (cooked al dente)
  • 1 lb lean ground turkey (93/7)
  • 8 slices turkey bacon (chopped and cooked crispy)
  • 1 tbsp olive oil
  • 1 medium yellow onion (finely diced)
  • 3 cloves garlic (minced)
  • 1 tsp Diamond Crystal kosher salt
  • 1/2 tsp freshly cracked black pepper
  • 2 cups shredded mozzarella cheese
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 4 tbsp unsalted butter
  • 4 tbsp all-purpose flour
  • 2.5 cups whole milk (warmed)
  • 1/2 tsp garlic powder

Directions

  1. Cook the lasagna noodles in a large pot of salted water until al dente. Drain and lay them flat on parchment paper to prevent sticking.
  2. In a large skillet, heat olive oil over medium-high heat. Add the ground turkey, breaking it up with a wooden spoon, and cook until browned and no longer pink.
  3. Add the diced onion and minced garlic to the skillet with the turkey. Season with Diamond Crystal kosher salt and black pepper, cooking until the onions are translucent and fragrant.
  4. In a separate saucepan, melt the butter over medium heat. Whisk in the flour to create a roux, cooking for 1-2 minutes until slightly golden.
  5. Slowly pour in the warm milk while whisking constantly to prevent lumps. Cook until the sauce thickens, then stir in the garlic powder and 1/2 cup of grated Parmesan cheese until smooth.
  6. Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with non-stick spray or a thin layer of the garlic-parmesan sauce.
  7. Assemble the lasagna: Spread a thin layer of sauce at the bottom of the dish, followed by 3-4 lasagna noodles. Layer with ground turkey, crispy turkey bacon, a drizzle of sauce, and a blend of mozzarella, cheddar, and Parmesan cheeses.
  8. Repeat the layers, ending with a final layer of noodles topped with the remaining garlic-parmesan sauce, mozzarella, cheddar, and turkey bacon.
  9. Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes until the cheese is melted, bubbly, and golden brown on top. Let rest for 10 minutes before slicing.

  • Warming your milk before adding it to the flour-and-butter roux prevents thermal shock, ensuring the starch granules expand evenly without clumping.
  • Keep a close eye on your garlic when sautĂ©ing with the onions; burnt garlic turns bitter instantly and will ruin the delicate flavor of the cream sauce.

Instead, use the oven.

Place a slice in an oven-safe dish, splash a tablespoon of milk or water over the top to restore moisture, cover tightly with foil, and bake at 350°F for 15 minutes.
