Passion Fruit Mousse
A silky, tart, and sweet passion fruit mousse whipped to airy perfection and topped with a vibrant fresh fruit glaze.
- Gelatin Stabilization: Blooming the gelatin ensures a smooth, lump-free network that holds the mousse's structure without making it rubbery.
- Acid-to-Fat Ratio: Whipping the cream to soft peaks before folding prevents the highly acidic passion fruit pulp from curdling the dairy.
- Temperature Control: Cooling the passion fruit base to room temperature prevents the whipped cream from melting upon contact.
I still remember the humid July afternoon I tried to make my first tropical dessert in a cramped third-floor apartment with a hand mixer that smelled like burning plastic. I wanted something elegant but ended up with a soupy, curdled mess that looked more like scrambled eggs than a delicate sweet treat.
It was humbling.
Think about this in terms of food chemistry: passion fruit juice is highly acidic, which can easily cause the proteins in heavy cream to clump and curdle if folded in too quickly or at the wrong temperature. If you love creamy citrus desserts like my no-bake orange creamsicle cheesecake, you know how tricky it is to balance fruit acids with dairy.
To solve this, we rely on a stabilized gelatin matrix and a gentle, staged folding technique. By blooming Knox unflavored gelatin in cold water before whisking it into warm passion fruit puree, we create a structural web that traps air bubbles. When you fold this cooled mixture into heavy cream whipped to soft peaks, the fat molecules wrap around the air pockets, ensuring a velvety texture that won't collapse or weep, even after twenty-four hours in the fridge.
While folding can feel a tad clumsy at first, this method is hands down the best way to get that airy texture. This foolproof method delivers a restaurant-quality dessert with minimal effort.

Ingredients
- 1 tbsp (9g) Knox unflavored gelatin powder
- 1/4 cup cold water
- 1 cup (240ml) passion fruit puree (unsweetened, fresh or frozen)
- 3/4 cup (150g) granulated sugar
- 1 1/2 cups (360ml) heavy whipping cream (cold)
- 1 tsp pure vanilla extract
- 1/2 cup fresh mixed berries or tropical fruit (for topping)
- Pinch of Diamond Crystal kosher salt
Directions
- Bloom the gelatin: Sprinkle the gelatin powder evenly over the cold water in a small bowl. Let it sit for 5 minutes until it softens and looks like applesauce.
- Heat the puree: In a small saucepan over low heat, combine the passion fruit puree and sugar. Stir constantly until the sugar completely dissolves, but do not let it boil.
- Melt the gelatin: Remove the saucepan from the heat. Add the bloomed gelatin and a pinch of salt, stirring until the gelatin is completely melted and incorporated. Let the mixture cool to room temperature.
- Whip the cream: In a large, chilled bowl, beat the cold heavy cream and vanilla extract using a hand mixer or stand mixer until soft peaks form. Do not over-whip, or the mousse will turn grainy.
- Fold together: Gently pour the cooled passion fruit mixture into the whipped cream. Using a rubber spatula, fold the mixture together using a figure-eight motion until completely smooth and uniform in color.
- Chill and serve: Spoon the mousse into individual serving glasses. Cover with plastic wrap and refrigerate for at least 4 hours, or overnight, before topping with fresh fruit and serving.
Notes
- I highly recommend using Knox unflavored gelatin; one standard envelope contains exactly 1/4 ounce (7 grams), which is perfect for this recipe.
- Heavy cream must be at least 36% butterfat to properly trap air bubbles; lower fat options like half-and-half lack the lipid structure needed to hold the mousse's shape.
- Never add hot passion fruit syrup directly to the whipped cream, or the heat will instantly melt the fat emulsion, leaving you with a flat, watery soup.
- After 24 hours in the fridge, the gelatin network fully sets, making the mousse slightly firmer but still wonderfully creamy.
- If your passion fruit puree is exceptionally tart, you can increase the sugar by 2 tablespoons without affecting the chemical balance of the set.
Serving Suggestions
This elegant dessert looks stunning when served in individual glassware. You can dress it up or keep it simple depending on the occasion.
- Top with a spoonful of fresh passion fruit seeds for a beautiful crunch and tart contrast.
- Serve alongside a vibrant fresh fruit bowl for a refreshing summer spread.
- Garnish with a sprig of fresh mint to add a pop of green and a clean aroma.
- Pair with light, crispy cookies like pecan lace cookies to add a delightful texture play.
- Drizzle with a touch of white chocolate ganache for an extra layer of creamy sweetness.
Storage and Reheating
Keep it cold.
This mousse must be stored in the refrigerator at all times. Cover each individual glass tightly with plastic wrap to prevent the cream from absorbing any stray fridge odors.
It will easily keep for up to four days, though the fresh fruit topping should be added just before serving to prevent it from bleeding into the mousse. Do not attempt to freeze this dessert, as the freezing process breaks the delicate gelatin-fat emulsion, causing it to separate and weep upon thawing.
Ingredient Substitutes
If you need to make adjustments based on what is in your pantry, here are the best tested swaps:
- Passion Fruit Puree: You can substitute mango or raspberry puree for a different fruity twist, keeping the measurements exactly the same.
- Gelatin: For a vegetarian option, use agar-agar powder, but reduce the amount to 1 teaspoon as it has a much stronger setting power.
- Granulated Sugar: Caster sugar works beautifully here, but avoid brown sugar as its molasses notes will overpower the delicate tropical flavor.
I hope this silky dessert brings a little bit of tropical sunshine to your kitchen table. It is the ultimate low-effort, high-reward treat that never fails to impress.
