Directions

  1. Preheat your oven to 375°F (190°C) and line a heavy-duty baking sheet with a silicone baking mat.
  2. Arrange the cheese into 12 small, even mounds on the prepared baking sheet, leaving at least 2 inches of space between each mound to allow for spreading.
  3. Gently press one slice of pepperoni onto the top of each cheese mound, tapping it down slightly with your fingertips so it clings to the cheese.
  4. Sprinkle a tiny pinch of dried oregano and Diamond Crystal kosher salt over each crisp for a touch of classic pizzeria aroma.
  5. Bake for 8 to 10 minutes, watching closely after the 7-minute mark, until the edges are golden brown and the centers are bubbling.
  6. Remove from the oven and let the crisps cool on the baking sheet for 5 minutes; they will become shatteringly crisp as they cool.

Notes

  • I highly recommend using Diamond Crystal Kosher Salt; if you are using Morton's kosher salt, cut the volume in half (use just 1/16 teaspoon) to avoid an overly salty bite.
  • Freshly grated low-moisture mozzarella works best because pre-shredded bag cheese is coated in potato starch or cellulose to prevent clumping, which interferes with the protein matrix and prevents a clean, crispy snap.
  • Do not walk away from the oven during the last two minutes of baking; the transition from perfectly golden to bitter, burnt carbon happens in a matter of thirty seconds.
  • After a day in the fridge, these crisps will lose their crunch and become slightly chewy, but you can easily restore their crispness by popping them back into a dry skillet over medium heat for sixty seconds.
