Shrimp and Crab Alfredo Lasagna Roll-Ups
Indulge in these luxurious Shrimp and Crab Alfredo Lasagna Roll-Ups, featuring tender seafood and a rich, garlicky cream sauce wrapped in perfectly cooked pasta sheets.
- Cream cheese stabilizes the Alfredo sauce, preventing the dreaded oil separation when baked.
- Pre-cooking the shrimp locks in their sweet flavor and prevents excess moisture from diluting the rich filling.
- Individual roll-ups maximize the surface area for crispy, golden parmesan edges that everyone fights over.
I still remember the humid Tuesday evening I tried to make a massive seafood lasagna for my sister's engagement dinner, only to watch it collapse into a watery, tragic soup the second my knife touched the pan.
It was humiliating.
If you love seafood and cream as much as I do, you've probably made my Creamy Shrimp Pasta or my classic Garlic Butter Shrimp Pasta with great success.
But baking those delicate proteins inside a heavy, layered casserole is a completely different beast.
While I adore a comforting Slow Cooker Lasagna on chilly Sundays, delicate seafood demands a much lighter, more precise touch to prevent it from turning rubbery.
Bear with me here, because the physics of this is fascinating.
When you trap raw shrimp and crab under heavy sheets of pasta, they release their natural juices directly into the sauce as they cook, breaking the emulsion of your Alfredo and turning the cheese into a rubbery, separated mess.
Cheap, pre-shredded mozzarella in a bag failed every single test because the anti-caking cellulose prevents it from melting into a smooth, cohesive blanket.
Roll-ups solve this by letting steam escape, keeping the sauce perfectly intact.
We are going to build a stable protein matrix using whipped cream cheese and egg, ensuring every single bite clings to the fork instead of sliding onto your plate.
This is hands down the easiest way to get that luxurious restaurant-quality seafood pasta at home without the structural anxiety.

Ingredients
- 8 lasagna noodles (cooked al dente)
- 1 tbsp olive oil
- 1/2 lb medium shrimp (peeled, deveined, and chopped)
- 1/2 lb lump crab meat (drained and picked through)
- 8 oz cream cheese (softened)
- 1 cup ricotta cheese
- 1 large egg
- 1 tsp Diamond Crystal kosher salt
- 1/2 tsp freshly cracked black pepper
- 2 cups homemade Alfredo sauce
- 1.5 cups shredded mozzarella cheese (divided)
- 1/2 cup freshly grated Parmesan cheese (divided)
- 2 cloves garlic (minced)
- 1 tbsp fresh parsley (chopped)
Directions
- Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish with nonstick spray.
- Cook the lasagna noodles in a large pot of salted water until just al dente, then drain and lay them flat on parchment paper to prevent sticking.
- Heat olive oil in a skillet over medium heat, add the minced garlic and chopped shrimp, and sauté for 2 to 3 minutes until the shrimp just turn pink.
- In a medium bowl, vigorously beat the softened cream cheese, ricotta, egg, Diamond Crystal kosher salt, and black pepper until completely smooth.
- Gently fold the sautéed shrimp, drained crab meat, half of the mozzarella, and half of the parmesan into the cheese mixture.
- Spread a thin layer of Alfredo sauce (about 1/2 cup) over the bottom of your prepared baking dish.
- Spread about 1/3 cup of the seafood mixture evenly along the length of each lasagna noodle, then roll them up snugly from one end to the other.
- Place the roll-ups seam-side down in the baking dish, pour the remaining Alfredo sauce over the top, and sprinkle with the remaining mozzarella and parmesan.
- Bake uncovered for 25 to 30 minutes until the sauce is bubbly and the cheese on top is beautifully golden brown.
Notes
- I highly recommend using Diamond Crystal kosher salt; if you only have fine table salt, cut the measurement in half to avoid a salt bomb.
- Softened cream cheese acts as an emulsifier in this filling because its lactic acid and protein structure prevent the ricotta from weeping water as it bakes.
- Do not overcook your lasagna noodles during the boiling phase; they should have a distinct bite because they will continue to absorb moisture and cook in the oven.
- After a day in the fridge, the starches in the pasta will fully set, making the roll-ups even easier to slice and lift without losing their shape.
Serving Suggestions
These rich, decadent roll-ups deserve sides that cut through the creamy cheese and highlight the sweet seafood. Pair them with fresh, vibrant elements to round out your dinner table.
- A crisp green salad tossed with a bright lemon-herb vinaigrette.
- Our smoky Balsamic grilled vegetables with a touch of garlic flavor to add a charred, acidic contrast.
- Warm, crusty garlic bread to swipe up every last drop of the Alfredo sauce.
- A chilled glass of high-acid white wine like Pinot Grigio or Sauvignon Blanc.
Storage and Reheating
Leftovers are a gift.
Store any remaining roll-ups in an airtight container in the refrigerator for up to three days, keeping in mind that the seafood flavor will deepen slightly overnight.
Reheat them in the oven at 350°F with a splash of milk and a foil cover to preserve the moisture.
Avoid the microwave if you can.
High microwave heat will cause the fats in the Alfredo to separate, leaving you with a greasy pool instead of that velvety creaminess we worked so hard to achieve.
Ingredient Substitutes
If you need to swap things out based on what is in your fridge, here are the best tested alternatives:
- Lump Crab: You can easily substitute claw crab meat or even high-quality imitation crab if you want to keep this budget-friendly.
- Shrimp: If you are out of shrimp, try using bay scallops or even shredded chicken breast for a different spin.
- Ricotta: Cottage cheese works beautifully as a high-protein swap, just make sure to drain it well first.
- Alfredo Sauce: If you want a lighter profile, swap the Alfredo for a zesty garlic white wine sauce.
Let me know how your roll-ups turn out, and don't be afraid to get your hands a little messy during the rolling process—that's where the magic happens!
