Directions
- Bring a medium pot of salted water to a boil. Add the shrimp and cook for 2 to 3 minutes until they turn pink and opaque.
- Drain the shrimp immediately and plunge them into an ice bath to stop the cooking process.
- Once cold, drain the shrimp and transfer them to a clean kitchen towel. Wrap them up and gently squeeze to remove all excess water.
- In a medium bowl, whisk together the mayonnaise, celery, fresh dill, lemon juice, Dijon mustard, Diamond Crystal kosher salt, black pepper, and paprika.
- Chop the dried shrimp into bite-sized pieces, then fold them into the dressing until fully coated.

Notes
