Ingredients

  • 12 slider buns (such as King's Hawaiian sweet rolls)
  • 3 cups cooked chicken breast, shredded (about 450g)

  • 1/3 cup sweet chili sauce (Mae Ploy brand)
  • 1 tablespoon sriracha
  • 1 tablespoon honey
  • 1/2 teaspoon Diamond Crystal kosher salt
  • 1 1/2 cups shredded mozzarella cheese
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon chopped fresh chives (for garnish)

Directions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper to prevent sticking.
  2. Slice the entire block of slider rolls in half horizontally, keeping the individual rolls connected. Place the bottom half on the prepared baking sheet.
  3. In a medium bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, and Diamond Crystal kosher salt until smooth and fully emulsified.
  4. Add the shredded chicken to the bowl and toss until every piece is thoroughly coated in the sauce.
  5. Spread the sauced chicken evenly over the bottom half of the rolls. Tap your tongs against your hip to shake off any excess sauce before layering.
  6. Sprinkle the shredded mozzarella cheese evenly over the chicken layer. Place the top half of the rolls over the cheese.
  7. Brush the melted butter generously over the tops of the rolls. Bake for 12 to 15 minutes, or until the cheese is completely melted and the tops are golden brown. Garnish with fresh chives before slicing and serving.

Notes

  • I highly recommend using Diamond Crystal kosher salt for this recipe. If you only have standard table salt on hand, cut the measurement in half (use 1/4 teaspoon instead of 1/2 teaspoon) to avoid over-salting the chicken mixture.
  • Do not swap the mayonnaise for Greek yogurt or low-fat alternatives. Real mayonnaise is a stable emulsion of oil and egg yolk; under the heat of the oven, this fat barrier insulates the chicken proteins, whereas yogurt will split and curdle, leaving you with watery buns.
  • Keep a close eye on the oven during the last three minutes of baking. The sugars in the sweet rolls and the melted butter can transition from beautifully golden to burnt incredibly fast, so tent them with foil if they are browning too quickly.
  • If you have leftovers, store them in an airtight container in the fridge. Note that the bottom buns will naturally absorb the sauce over 24 hours, making them softer, so they are best reheated in an air fryer to restore some of that lost crispness.

Storage and Reheating

Let's be completely honest: sliders are always best eaten fresh out of the oven when the cheese is stretchy and the buns are crisp. However, if you find yourself with leftovers, wrap them tightly in aluminum foil before placing them in the refrigerator. They will keep reasonably well for up to three days.

Do not use the microwave to reheat them.

Microwaving will turn the sweet rolls into a rubbery, sad mess and cause the mayonnaise in the sauce to separate into an oily puddle. Instead, keep them wrapped in the foil and pop them into a 350°F (175°C) oven for about 10 minutes.

For the absolute best results, use an air fryer set to 320°F (160°C) for 4 to 5 minutes. This circulating dry heat crisps up the bottom bun beautifully while gently warming the chicken through. It almost makes them taste like they were freshly baked.

Ingredient Substitutes

If you don't have everything in your pantry, don't panic. Here are the easiest swaps that won't ruin your dinner:
